This Christmas enjoy a “hot apple foie mi-cuit”

Offering a salty/sweet pairing is a great solution for changing up your routine and enjoying a different and appetizing snack. Our suggestion for this Christmas is to incorporate a gourmet product such as foie mi-cuit and lighten it up with a fresh touch of apple.

It is an ideal recipe for beginner cooks because it is very easy to prepare, but in the hands of an expert it is also up to any expectations.

Ingredients for 4 people:

  • 4 medium-thickness pieces of toast
  • 4 slices of foie mi-cuit
  • 4 thin slices of apple (choose variety according to sweetness or acidity)
  • a knob of butter
  • cane sugar
  • Maldon salt
  • a Pedro Ximenez reduction

Preparation:

Keep in mind that the cooking time for the ingredients will be very short and it is best to serve the dish freshly made to conserve all the aroma and the temperature. Our advice is to have the plates with the toasts ready to be put together.

First, season the foie with cane sugar on both sides. Start by browning the apples on a griddle or skillet on both sides with butter. Once they have browned put them on the toast.
Then immediately grill the foie for just a moment until the sugar caramelizes slightly. Carefully remove and place on top of the apple.
Finally, season with some Maldon salt flakes and a few drops of Pedro Ximenez reduction.
